Grain Free Cereal

This recipe is adapted from The Functional Nutrition Alliance


INGREDIENTS

1 tablespoon ground flax
1 tablespoon pumpkin seeds

1 brazil nut
2 tablespoons shredded coconut

2 teaspoons chia seeds
1⁄4 teaspoon cinnamon
pinch of sea salt

1⁄2–1 teaspoon raw honey (optional)

1⁄2 bosc pear chopped
1 tablespoon goji and/or dried golden berries 

Coconut milk


PREPARATION

  1. With a spice/coffee grinder, grind flax seed into a fine meal and set aside. Or you can buy already ground flax seeds.

  2. Using a food processor, process pumpkin seeds, brazil nut, coconut, chia, cinnamon, and sea salt until finely ground. Add the flax in and pulse a few more times to incorporate. Add hot water to cover along with honey. Mix well. Top with fruit, berries and a drizzle of coconut milk.

Serves 1–2



Here’s some quantities to mix a big batch and have for a couple of weeks:

1 cup ground flax
1 cup pumpkin seeds

1/2 cup brazil nuts
2 cup shredded coconut

2/3 cup chia seeds
1 tablespoon cinnamon
1/2 teaspoon sea salt


Serving size for each breakfast is a heaping 1/4 cup.
